Title: Fruit and Cheese Strudel

Yield: 8 Servings

1/2pkFarmer's cheese,
6ozCream cheese, softened
  (7 1/2 oz size)
1/2cGranulated sugar
2 Lg. egg yolks
2tbAll-purpose flour
1 1/2tsGrated orange zest,
1/4cDried cherries, diced; (colored part of peel) or dried cranb
1/4cDiced dried apricots
1/3cSliced, toasted almonds
4 1/2tsFine dry bread crumbs,or mor
8 Sheets phyllo pastry thawed
3tbButter, melted
  Confectioners'sugar to dust

1. In food processor, combine almonds and bread crumbs; finely grind. Set aside.

2. Make filling: Sieve farmer's cheese into large bowl of electric mixer. (or use food processor) Add cream cheese; beat until smooth. Add sugar, egg yolks, flour and orange zest; beat until blended. Stir in dried fruits.

3. Preheat oven to 350 F. Place strudel dough on work surface with long side facing you, brush with some melted butter and sprinkle with about 1 Tbls.almond mixture. If using phyllo, use 1 sheet of phyllo (cover remaining phyllo with damp cloth), brush melted butter and sprinkle with 1 Tbls. almond mixture. Cover with another phyllo sheet and repeat with remaining butter, almonds and phyllo, ending with a plain sheet of phyllo and reserving some butter to glaze strudel.

4. Spoon filling over lower long side of phyllo (or strudel dough) to within 1 1/2 inches of edges. Roll up, jelly-roll fashion; fold ends under. Brush strudel with remaining melted butter. Place strudel, seam side down, on baking sheet. Bake 45 to 50 minutes or until golden brown. Cool slightly before slicing. Dust lightly with confectioners' sugar.
